Sweet Potato Souffle

I do believe it is a southern tradition to have Sweet Potato Souffle with Thanksgiving.

How something as French sounding a “souffle” can be southern I’m not sure.

Unless it made its way over from Louisiana. 

Naw! That’s not it. 

Some may call it a pie. That  here in the south, would be pronounced pi-i-ie. We do tend to draw our long I’s out a bit. But, to me it’s not a pie because it doesn’t have a crust. At least not a crust made from flour and shorting and put in a round pan. 

So, souffle it is! 

This was my mother’s recipe. I only make it at Thanksgiving, but it’s good any time of year! 

Whatcha Need

For the souffle

  • 3-4 medium  size sweet potatoes
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/3 stick butter
  • 1/2 cup milk
  • 1 teaspoon vanilla

For the topping

  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 cup chopped nuts
  • 1/3 stick melted butter

Putting It All Together

sweet potato and pecan pie 002Bake the sweet potatoes until soft, about 1 hour at 375. Or you can boil them. I liked them baked. Peel them and place them in a bowl when done.

sweet potato and pecan pie 006eggs,  

sweet potato and pecan pie 008milk and,

sweet potato and pecan pie 009vanilla.

sweet potato and pecan pie 010Using a potato masher, mash and mix all ingredients together.

Now for the topping!

If you want, you can make this the day before and refrigerate over night. Allows the flavor to blend well!

Sooo, I forgot to get a picture of it all cooked. I’m so sorry! It is golden brown and smells oh so good!

  6. 1/3 stick butter
  7. 1/2 cup milk
  8. 1 teaspoon vanilla
  9. Topping
  10. 1 cup brown sugar
  11. 1/3 cup flour
  12. 1 cup chopped nuts
  13. 1/3 stick melted butter
Instructions
  1. Souffle
  2. Mix all souffle ingredients together and pour into greased 9 x 13 baking dish.
  3. Topping
  4. Mix all topping ingredients together and sprinkle over souffle. Bake at 350 for 35 minutes

  1. This can be made a day ahead.
