Potato Pancakes

I had never heard of these before and thought they sounded pretty good so I gave them a try. They are pretty good. Easy too. You can have them at dinner as a side dish and dip in ketchup or as breakfast and topped with syrup. Either way they are pretty good.

Ingredients 

  • Mashed potatoes (about 3 cups) Doesn’t matter if made from scratch or instant, if you just made them or they are left overs.
  • 1 cup “just add water” pancake mix
  • 1/2 cup sour cream
  • 2 eggs

How to Make

Mix all the ingredients together.

Spoon onto greased and heated griddle. Cook on medium heat for about 2-3 minutes or until golden brown on the bottom.

Flip and cook for another 2-3 minutes or until golden brown. Here’s a tip…

Spray your spatula with cooking spray before you flip to keep things from sticking to it. The bubbles are the cooking spray.

Makes about 15 large pancakes. Enjoy!!
