I have to admit that this is one recipe straight from the package. I do have a tip about cooking them though.
Place slices into bowl and top with Concord Foods Roasted Potato seasoning mix. They have a couple of flavors to choose from. I find it in the produce section of the grocery store. Following the directions on the back of the package, make the fries. I mix 1 Tbsp of seasoning with 1 Tbsp oil. 2-2 ratio if more fries are cooked.
Pour over potatoes.
Here is the tip I wanted to share. Can’t remember where I heard it. Take some aluminum foil and crinkle it. Uncrinkle (is that a word?) and line baking sheet with it. Spray with cooking spray. The crinkled foil helps the potatoes to cook more evenly. It seems to work pretty well so far.
Follow baking directions on package. Mine were baked at 400 degrees for 30 turning them once after 15 minutes. If you cut thick potato wedges you need to bake them for 30-40 minutes, turn them over once after 15 minutes. Be careful not to tear the foil.
We eat these with hamburgers, steaks and barbecue chicken. They are a good summer time side dish.
