Crushed Potatoes

I came across this recipe on my favorite blog, The Pioneer Woman. She has so many good recipes. I had been wanting to try it for a while but didn’t have the red potatoes.

Then, my friend Sharon, who makes frequent trips to the food bank for our churches food pantry, called me and told me she had just picked up a load of free potatoes and asked me if I wanted any. Of course, I said yes, mainly ’cause I needed some for the wedding. God blessed me with red potatoes not only for the wedding but so I could try this recipe! He is so good!

I didn’t have all the ingredients that PW used so mine were made differently. They were absolutely delicious!!!

Go get you some red potatoes and try these!

What You Will Need

  • Red potatoes -lots of them. Trust me on this!
  • Butter
  •  Salt -I used Kosher  salt. I just like it better.
  • Italian Seasoning about 1 1/2 teaspoon
  • Cooking spray
  • Shredded cheddar cheese

No real measurements here. Everything is to taste. It also depends on how many you make.

Putting It All Together

Wash the potatoes and bring a large pot of water to boil. I forgot to get a picture of this.

Boil the potatoes until tender enough to stick with a fork. I forgot to get a picture of this too, so I stuck 3 back in the pot to get one.

Place potatoes on a baking pan that is well sprayed with cooking spray.

Using a potato, masher press down on the potato to bust it open.

I had a couple of larger potatoes that didn’t get done. I placed them in the microwave for about 2 minutes.

Melt the butter.

Add the Italian Seasoning and mix.

Using a brush, brush the butter mixture over the potatoes.

Let me tell you about my brush.

It is a paint brush. I was in a pinch one day and whipped this out and it worked perfectly. Don’t laugh at me. It does the job.

Sprinkle with salt and cheddar cheese. Baked at 350 for about 20-25 minutes until crispy on the outside.

I served mine with Oven Fried Pork Chops and black-eyed peas! My Man was a happy camper! We all ended up eating about 3 a piece. They were so good!!
