Peanut Butter Honey Bars

After my mom passed away, my sisters and I were allowed to get some of her things. I wanted her old Betty Crocker Cookbook. This one was written way back in the 50’s. Maybe the 60’s. The copyright page is missing and I’m guessing the date by the pictures of the people in it. The ladies look like June Cleaver. You would never catch me cleaning and cooking in a dress and pearls.

In the back of this cookbook is the real treasure. Old recipes she had cut out of the newspaper. That is where I found this recipe.

I have changed the name. I think Peanut Butter Honey Bars has more of a ring to it than Honey Peanut Butter Bars. I also tweaked the recipe some.

This is an amped up version of Rice Crispy Treats. I’m making them for Dillon to take to his track meet tomorrow. He likes to take healthy snacks to the meets, especially since he will be there all day long. Really…all day. Meet starts at 9:00 and will end at about 4:00. All the concession stand will have is junk food. Runners get sick on junk food. My Bad! Back to the recipe!

The is one of those “you need to have everything measured out ’cause  you gotta move quick to make this” recipes. Especially if you are taking pictures while you make it. So get your stuff measured and let’s make some Peanut Butter Honey Bars.

Ingredients 

  • 6 cups puffed rice cereal
  • 1/2 cup raisins (optional)
  • 1 cup peanuts
  • 3 tablespoons butter
  • 5 1/2 cups mini marshmallows. I used the whole bag.
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 bag milk chocolate chips

Putting It All Together

 In a bowl measure out the cereal and peanuts. I took the time to half the peanuts. Raisins too if you use them. I didn’t. Dillon doesn’t like raisins. I, on the other hand, love them. None of my kids like raisins. That’s not right! Not at all!

 In a large sauce pan melt the butter.

Add the marshmallows and stir until melted.

Add the peanut butter,

  and the honey.

 Stir until peanut butter is melted. Remove from heat.

 Add cereal and peanuts (and raisins) and stir until well mixed.

Spread onto a greased cookie sheet. To keep the cereal from sticking to the spray the spatula with cooking spray.

Spread the chocolate chips over the top of the cereal mix. Place in a preheated oven (350) for 2 to 3 minutes.

Spread the melted chocolate chips over the cereal mix.

Let chill in the fridge until firm. Cut into bars whatever size you want.

Mine are still in the fridge chilling. I’m going to let Dillon taste them first and see what he thinks of them. haha
