Sassy Meatballs

My Man’s favorite meal is meatloaf. It is Dillon’s least favorite. I have to admit I have made it so much I’m getting a little tired of it too. I had to do something about this dilemma. I make meatloaf a couple of different ways and this is the one we all like the best.

What I like about making meatloaf  is that I can also cook the rice and vegetable at the same time in the oven. More on that later. I also like that it can be made ahead of time, at least the meatballs can be, and left in the refrig until ready to cook.

The sauce is what makes these meatballs sassy.  It is so easy and can be used on chicken too. Let’s get started…

Ingredients 

For Meatballs

  • 1 egg
  • 3/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup quick-cooking oats
  • 1/2 cup onions
  • 1 tsp salt
  • 1 pound ground beef

How to Make 

In a mixing bowl, stir together egg and milk.

Stir in cheese,

and onions,

and oats,

and salt. Stir all together until well blended.

Mix in ground beef.

Grease a baking sheet with cooking spray. Using an ice cream scoop make meatballs and place on pan.

Now for the sauce!

Ingredients 

For Sassy Sauce

  •  2/3 cup ketchup
  • 1/2 cup packed brown sugar
  • 1-1/2 tsp prepared mustard

How to Make

In a bowl, yes I am using one here, mix together ketchup,

brown sugar, (sorry this is blurry)

and mustard.

 

 

Make sure to get out all lumps of brown sugar.

Spoon on top of meatballs. Bake at 350 degrees for about 45 minutes or until no longer pink in the middle. Smaller meatballs don’t take as long to cook.

To cook the rice along with this simply put twice the water as rice (I use 2 cups water and 1 cup rice with a tsp of salt) into a covered 2-quart casserole dish and place in oven before I begin the meatballs. The rice needs a little longer to cook than the meatballs. I put the vegetable in when I put in the meatballs.
