Oven Baked Chicken

Dillon came home from church last night and picked up a handful of these chicken pieces while saying, “I love these, they are so good!” I don’t get compliments like that often. Not that I am not a good cook, but I know they really like it when they say so.

These are so easy to make. They can be either chicken tenders, popcorn chicken or the whole breast, boneless of course. Depending on what you decide to make will vary the baking time.

Ingredients

 

  • cooking spray (Pam)
  • 2/3 cup bakery mix (Bisquick)
  • 1 1/2 tsp paprika
  • 1 1/4 tsp salt
  • 1/4 tsp pepper
  • enough chicken to feed your family

For this night I made popcorn chicken.

How to make it:

Preheat oven to 425 F. Spray the dish you are going to bake in with cooking spray and let it heat up in the oven. This is very important or the crust will stick to the dish.

Mix the first 4 ingredients in a zip-lock bag. I used a gallon size.

For popcorn chicken cut the chicken into bite size pieces. Place chicken in zip lock bag. Close and shake to coat the chicken.

Place the coated chicken on the heated dish. Here I used an iron skillet, but I have used a glass 9 x 13 dish before. Again, make sure it is hot. Don’t burn yourself.

For the popcorn chicken I baked it for 15 minutes. Turn; and bake for another 10-15 minutes. When I turn mine I like to respray the dish before I lay the chicken  back down. Now for whole pieces of chicken, bake for 30-35 minutes; turn and bake for 15 minutes longer.

This really is sooo good. And sooo easy. I served mine with mashed potatoes and blackeye and biscuits. YUM!

Ingredients

Instructions
  1. Preheat oven to 425 F. Spray baking dish with cooking spray and heat in oven.
  2. Mix first 4 ingredients in a zip lock bag.
  3. Place chicken in bag, seal and shake to coat.
  4. Put chicken on heated dish and bake for 30-35 minutes (popcorn for 15).
  5. Turn chicken, respraying pan, and bake another 15 minutes longer (popcorn for 10).
Notes
  1. You can freeze any left over coating to use again.
