My Man smoked one of his famous pork loins on Sunday. They are so good!!! The only problem is he cooked enough for 20 people and there are three of us here. That’s means lots of left overs. LOTS of leftovers.

Dillon asked me what we were having for dinner and when I said leftover pork, the look on his face said it all. Not what he wanted.

So, I googled “leftover pork loin recipes.” I found one page that gave me a recipe for each day of the week. Apparently, someone else’s husband also likes to smoke enough pork for 20 people when only feeding three.

This one caught my eye because I had every ingredient! It is rare I have the ingredients needed when I find a new recipe.

Here it is. Enjoy!!!

Mexican Rice with Pork

Whatcha Need

I doubled everything to serve 4.

  • 1/2 cup long grain rice
  • 2 Tbsp. vegetable oil
  • 1/4 chopped onion
  • 1/4 cup chopped green pepper
  • 1 Tbsp. chile powder
  • 1 clove garlic; finely chopped
  • 1/4 cup diced tomatoes
  • 1 cup chicken stock
  • 1/2 tsp. salt
  • cut up pork about 1 to 1 1/2 cups

Putting It All Together

Heat oil in a large sauce pan over medium heat. Add rice and cook (stirring frequently to prevent burning) for 5 minutes. Yes, the rice is uncooked. That was strange to me.

mexican rice 006and the chili powder and continue cooking for 5 minutes, stirring often. Stir in garlic and cook 1 minute longer. I didn’t use any garlic. I was out of it.

mexican rice 008Add tomatoes (we don’t like tomatoes), chicken stock,

mexican rice 011and salt and bring to a boil. Cover tightly cook over low heat for 20 minutes.

Remove from heat and allow to sit, covered, for another 5 minutes then fluff with a fork.

Yummy!!! We put our rice on tortilla shells topped with shredded cheese. You can also add sour cream, quacamole, lettuce, beans and salsa .

Ingredients

  6. 1 clove garlic; finely chopped
  7. 1/2 cup diced tomatoes

  9. 1 tsp. salt

      Kimberly, yes it wad already cooked. It was actually left over. You can use any cooked meat. It’s also good with a package of taco seasoning instead of chili powder. Hope you enjoy it and thanks for stopping by my blog. God bless you!

    If you don’t add meat do you change the recipe at all? Like maybe just one cup of chicken stalk?
