I had my dinner menu all worked out for two weeks two weeks ago. I’m not sure what happened. All of a sudden I was out of some ingredients and couldn’t make what I had planned. Not to sound all poor pitiful me, we also are having to really watch what we spend right now, so I can’t just run to the store and get what I am out of. Having said all that, I had to think of something I could cook with what I had on hand.
That took some thinking. I would think I could make a ham and mac & cheese casserole only to realize I had no mac & cheese.
The horror of having no mac & cheese.
I thought about chicken casserole, but had no sour cream or crackers.
How about barbecue cups ? Ugh…no cheese!
I started to complain about the situation I was in to God, and He gently reminded me to be thankful for what I do have and to stop focusing on what I don’t have. So, I closed my eyes, told Him thank you and I’m sorry and asked Him to show me what to cook for dinner. Country Ham Pasta Salad came to mind. I had everything I needed.
- 1 package macaroni (7 oz)
- 1/2 cup mayonnaise (we like Dukes®. Not paid to say that)
- 1 1/2 cups chopped fully cooked ham
- salt and pepper to taste
- 1/2 cup relish
- 1 apple cubed. I used a granny smith apple.
Putting It All Together
Ok, I have to admit that in the picture above there is no apple. The first time I made this to post, I forgot to take a picture of the salad after I mixed it. So, I waited till I made it again and I was too lazy to cut the apple.
This is great for a pot-luck, picnics or can be made ahead of time for those days where you are running everywhere with the thing called life and won’t have time to cook that night and are too broke to go out to eat. Hey, it happens!
My lesson learned was to be ever so thankful for what I have. God is out Provider and will make a way when there seems to be no way. Even with dinner.
