BBQ Chicken Sandwich

One of my favorite bloggers is The Pioneer Woman. She shared this recipe on her blog, but I have tweaked it just a bit.

The day I cooked this is was like 105 outside. Really! No joke! Her recipe calls to be cooked in the oven for 1 1/2 hours. I didn’t like the idea of my oven being on for that long on such a hot day. I didn’t want to wear out the AC, so I decide to try this in the crock pot!!! LOVE IT!

Before you say anything I know I called this a BBQ Chicken Sandwich. We did eat them as a sandwich. But I forgot to take a picture and we had eaten all the buns before I remembered to take pictures. What can I say? I was really hungry!!

What You Will Need 

  • Split chicken (I used one split chicken for my family of 5)
  • 1/4 cup onions, chopped.
  • Bottle of barbecue sauce (your favorite flavor)
  • salt and pepper to taste

Put the chicken into the crock pot. Mine were actually frozen when I put them in.

Put the onions in.

Squeeze a whole bottle of barbecue sauce all over the chicken. Sprinkle with salt and pepper. Put the lid on top and turn on crock pot. I got somewhat of a late start so I cooked mine for 6 hours.

When done, ya know, when the meat falls off the bone, remove from the crock pot. Don’t turn it off just yet. You will need to rewarm the chicken.

Remove the skin and bones and discard.

If you want large chunks of chicken place it back in the crock pot and rewarm.

If you want to feed a lot of people and make the meat stretch, then  pull the meat apart even more.

Place it back into the crock pot and stir and rewarm.

Serve on its own or on a bun. You can even top off your sandwich with coleslaw. YUM!!!!!

In a Nutshell

What You Will Need

Putting It All Together

  1. Put the chicken into the crock pot.
  2. Put the onions in.  Squeeze a whole bottle of barbecue sauce all over the chicken. Sprinkle with salt and pepper. Put the lid on top and turn on crock pot and cook for at least 6 hours.
  3. Remove the skin and bones and discard.
  4. Pull the meat into small pieces.
  5. Return meat to crock pot to rewarm.
  6. Serve on bun if desired!

    I have made this for Russ on several occasions….he loves it….Rach refuses to eat pork!!
