BBQ Beef Casserole

Do you ever get tired of cooking the same thing over and over and over? I sure do. That’s how I was feeling the other night when all I had in the freezer was ground beef.

And limited ingredients.

We had just had tacos, didn’t want spaghetti or meatloaf, had no Hamburger Helper. I thought about BBQ Cups, but really wanted something new. What was I to do?

I was in a dilemma. It was 5:00 in the evening and I had a meeting at 7:00. I did what anyone would do.

I Googled it.

I found this recipe and tweaked it some to my taste. You can do the same.

Whatcha Need 

  • Ground beef about a pound
  • 1 medium onion chopped
  •  1/2 cup barbecue sauce
  • 2 cups water
  • 1 cup rice
  • 1/2 shredded cheddar cheese

Putting It All Together

Brown ground beef and onion; drain.

Add bbq sauce,

water,

and rice.

Salt to taste. I used about 1 teaspoon.

Stir it all together.

Bring to a boil. If you look closely at the top you can see the bubbles as it boils.

Cover and turn down low and cook for 20 minutes. It looks like mine is turned off. I promise there is a flame. My controls have always been weird.

See…flame. I love cooking with natural gas. Have all my life.

I burn stuff on electric.

My family would not like burnt food every night.

When rice is tender, sprinkle cheese on top and let melt.

My test to find out if it is any good is to ask my kids. Dillon liked it so it passed the test as a keeper recipe.

If it hadn’t, I wouldn’t be sharing it with you.

Dilemma solved for the night.

I’ll worry about what’s for dinner tomorrow, tomorrow.
