Bacon Wrapped Chicken

My Man and his friend, Justin, also his co-worker/boss, seem to have a lot of time on their hand at work. Not everyday, but when you work retail some days are slower than others. On those slow days, they like to look up things on Youtube. They search how to fix things like computers and cell phones and cars. They have look at fast painters. But, what they enjoy the most are the grilling clips from the BBQ Pit Boys. They have discovered the Potato Bomb there. MM also discovered the love of wrapping meat in bacon there. That was in inspiration behind this recipe. I actually got mine from another site I can’t remember or find at the moment. Opps! I did mine in the oven because it was so hot outside and I didn’t want to make MM grill. This would be much healthier done on the grill, if you’re looking for healthy. I should be. Whatcha Need 

  • Boneless chicken breast
  • Brown sugar
  • Salt
  • Pepper
  • Chili powder
  • Bacon

I’m sorry the pictures are so bad. It was really cloudy that day. Lighting was awful! I cut my chicken into strips, just for faster cooking. Leave them whole if you want. I have to admit I didn’t plan very well for this meal. I didn’t check to make sure I had enough of everything before I got started.  I was running low on brown sugar, so what you see in the next pictures really isn’t enough and I’m not sure how much it is. I just played this recipe by ear. In other words I didn’t measure anything. Thankfully, cooking isn’t an exact science. I just dumped what brown sugar I had on a plate, sprinkled some salt and pepper, along with chili powder and I think a little garlic salt. All to taste, of course. If you like it spicy add lots of chili powder, if not then don’t.  Feel free to add any other spices you may like. Wrap the chicken in a slice of bacon. Roll in sugar mixture. OR roll chicken in sugar mixture then wrap in bacon. Your choice. Place in a 9 x 13 baking dish sprayed with cooking spray and bake at 350 for about 30-35 minutes. You can also grill. If you do grill use toothpicks to hold the bacon in place. I served it along with potato salad, coleslaw and baked beans.  Hope you enjoy!! Jayne

  2. 1/2 cup brown sugar
  3. Salt
  4. Pepper
  5. Chili powder
  6. 1 Package Bacon
  1. Put the brown sugar into a plate. Sprinkle with salt, pepper and chili powder to taste. Wrap each piece of chicken in a piece of bacon. (Toothpicks help to hold the bacon in place.) Roll in the brown sugar mix to coat. Place in a well greased 9 x 13 baking dish and bake for 30-35 minutes at 350.
  2. This can also be cooked on the grill over medium-high coals for about 30 minutes, turning frequently to cook the bacon.
