Peanut Butter Brownies

Poor Dillon. I saw him, the other day, standing at the pantry looking inside for something to eat. He stood there for a long time, probably hoping that something would just magically appear. I have plenty of canned veges and pasta and other things I use to make dinner, but there was no snack foods. Nothing to grab quickly and go. Nothing he could eat while playing his video game. According to him, there was nothing to eat.

I had to agree, so I decided to do something about it. I was thinking about cookies but then I came across this brownie recipe. When I saw it had peanut butter in it I was hooked! I love chocolate and peanut butter! I also knew I had to share it with you!

Here it is!

What You Will Need 

  • 4 squares of unsweetened chocolate
  • 3/4 cup (1 1/2 sticks) of butter, divided
  • 2 cups sugar, divided
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup chopped nuts (optional)
  • 2/3 cup peanut butter

Set aside 1 tablespoon butter and 2 tablespoons of sugar.

Put remaining butter and chocolate squares in a microwavable bowl and microwave for 2 minutes or until butter is melted.

It should look something like this.

Stir together until chocolate is melted and creamy looking. Not blurred like this!

Add sugar,

eggs,

vanilla,

flour and nuts. I didn’t put nuts in mine. Didn’t have any to put in.

Stir all together mixing it well!

Spread into a 9 x 13 pan that has been sprayed with cooking spray.

Take the reserved butter and sugar and dump it in the bowl. As you can see I used the same one. It will be ok, I promise!

Add peanut butter.

Stir together until well blended.

Drop spoonfuls of peanut butter on top of brownie mixture. I used a big spoon and had some good size chunks of peanut butter, which I liked. You may choose to use smaller size spoonfuls. It’s all up to you!

Using a knife cut the peanut butter into the  brownie making swirls.

Swirl as much as you want.

Bake at 350 degrees for 30-35 minutes of until a knife inserted comes out with fudgy crumbs. Don’t overbake.

Now, enjoy! Look at that chunk of peanut butter. Yum!!!!

I couldn’t help but put some ice cream on top! Heaven!!  Pure heaven!

  6.  Take the reserved butter and sugar and add peanut butter.  Stir together until well blended.
  7.  Drop spoonfuls of peanut butter on top of brownie mixture.  Using a knife cut the peanut butter into the  brownie making swirls.
  8.  Bake at 350 degrees for 30-35 minutes of until a knife inserted comes out with fudgy crumbs. Don’t overbake.
  9. Let cool some before cutting into squares. Makes 24 squares.
