Oatmeal Cream Cookies

My Man is not much of a “sweets” kind of person but, he does like the Little Debbie Oatmeal Cream Pies. He likes to buy those in the big pack. Don’t you just love the price? haha

I saw this on The Pioneer Woman blog. Her suggestion was to use any oatmeal cookie recipe of your choice. My question was “how do you do the filling?” The answer…

So simple. I used the off brand.

Here is the oatmeal cookie recipe I used. Next time I will try a different one. My cookies were not as soft as I would have liked them.

Oatmeal Cream Cookies

In a bowl mix together brown sugar, butter…Yes there is a bowl there. It is glass.

and vanilla. Please use a measuring spoon. I have kind of learned to “eyeball” some measurements.

Beat them together until creamy.

Add in oatmeal,


salt, (I’m pouring it out of my hand)

and baking soda.

Mix in well with sugar mixture.

Make sure everything is moist. If it seems too dry add small amounts of water until you like the texture. My cookies were a little dry and hard.

If you have a cookie scoop you just made your life a whole lot easier. Use the scoop to make your cookies. If you don’t have one, try to make the cookies the same size. Bake the cookies.

After cookies have completely cooled place a spoonful of marshmallow cream on one cookie.

Place a second cookie on top. Place them in the fridge if needed to harden the cream.

In a Nutshell 

Oatmeal Cream Cookies


  • 3/4 cup shortening
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 3 cups quick cook oatmeal
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda

How To Put It All Together

  1. Preheat oven to 350 degrees
  2. Beat together shortening, brown sugar, sugar, egg, water, and vanilla until creamy.
  3. Add remaining ingredients and mix until all is moist.
  4. Using cookie scoop or making cookies in a uniform size, place on grease cookie sheet and bake for 10-12 minutes.
  5. Let cool completely. Place a spoon full of marshmallow cream onto bottom of one cookie. Put another cookie on top.
  6. Place in fridge to allow cream to harden, if necessary.
  7. ENJOY!!!
