Blueberry Bread

I don’t usually keep Christmas cards, but I got a Christmas card several years ago that had a recipe for Cranberry Bread. The recipe sounded yummy and I wanted to make it. Problem was, I didn’t have any cranberries. I did have some blueberries.

“Hummm,” I thought to myself, “I’ll just swap the blueberries for the cranberries.” Who wouldn’t have thought that, right?

Whatcha Need

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 10 Tablespoons water
  • 1/4 cup melted butter and cooled
  • 1 cup fresh (which are much better) or frozen blueberries.
  • 1/2 cup chopped nuts (optional)

Putting It All Together

In a bowl, stir together flour,

Make a well in the center of flour mixture. It’s hard to see in the picture. It is there, I promise.

WP_20131007_011and the melted butter.

WP_20131007_012Stir until flout mixture is moistened.

WP_20131007_014Add the blueberries and the nuts. I didn’t use nuts this time.

Fold in the blueberries and nuts.

Pour into a greased 5 x 9 inch loaf pan.

WP_20131007_020 I sprinkled some sugar on top just to add a little sparkle.

WP_20131007_021Bake at 350 degrees for about 45 minutes or until top is golden brown and knife inserted comes out clean.

WP_20131007_023Let cool in pan for 5 minutes then turn out on cooling rack. I like to serve it warm, but it does need to cool some to make slicing it easier.
