Grilled Chicken Salad Sandwiches

 I saw this on Facebook the other day. 

chicken and egg Just thought I’d share that. 

I guess because I am sharing with you my recipe for Grilled Chicken Salad Sandwich. 

MM love these. 

I loved them.  

A new summer recipe! 

YIPPEE!!

Grilled Chicken Salad

Whatcha Need

  • 3 cups cooked, shredded chicken (breast meat is best)
  • 1/3 cup ranch salad dressing
  • 1 teaspoon lemon juice
  • 1/3 cup sweet relish
  • salt to taste
  • Sourdough bread
  • Butter, softened
  • Lettuce
  • Cheddar Cheese, sliced 
  • Cool Ranch Doritos®

Putting It All Together

IMG_0605 In a pot boil chicken until done, about 20 minutes. Shred into pieces. 

IMG_0606Place the chicken in a bowl and add the salad dressing,

IMG_0607 lemon juice (which you can barely see in the picture)

IMG_0608and pickles (which I forgot to get a picture of). Stir it all together. Set to the side.

IMG_0610 Spread some softened butter onto the slices of bread. 

 

IMG_0611Place on a griddle and grill until golden brown. 

IMG_0612 While it is grilling, place a slice of cheese and let it melt slightly.

IMG_0614Remove from grill and add some chicken salad,

IMG_0616 and some Cool Ranch chips. 

IMG_0618 Top with the other slice of bread. Doesn’t it look yummy!

I shouldn’t have told you that. 

Oh well. What’s a burnt sandwich between friends?

Ingredients

Instructions
  1. In a pot boil chicken until done, about 20 minutes. Shred into pieces. Place the chicken in a bowl and add the salad dressing, lemon juice, and pickles. Stir it all together. Set to the side. Spread some softened butter onto the slices of bread. Place on a griddle and grill until golden brown. While it is grilling, place a slice of cheese and let it melt slightly. Remove from grill and add some chicken salad, lettuce, and some Cool Ranch chips. Top with the other slice of bread. Refrigerate any left over chicken salad.
Notes
  1. The chicken salad can be prepared in advance and refrigerated. Great for Sunday lunch!

  3. Looks great….I always put chips in my sandwiches…I love the crunch…but never thought to use Doritos!…thanks for the recipe!!!

  4. Yum, it sounds good, although the chips threw me for a second. I’ve never had them in a sandwich before.

    Re your comment on my post “How Flashes Deep Within an Atom Reflect the Life We’re Searching For,” Jayne, oh, that’s so true. Those years in university can make or break a person’s faith sometimes. We had a family member really wrestle with losing his faith after some science degrees, but then come back to it in a deeper stronger way afterwards. They are still in the scientific field, and now are more convinced then ever that God is real, but they agonized and wrestled with doubt for a long time after that. Praying fr your son with you today. May he see amazing intricacy. University chemistry prof Dr. Jay Wile is an author and scientist. We use his science textbooks, and appreciate them.

      Thank you for the prayers. I do get tickled with my son sometimes, because they try to teach him the worldly view and he is like, “that’s so dumb! How could you possible believe that?” haha The chips through me at first too, but they really are good. You could just try one on the corner of the sandwich and see how you like it.
