Chewy Oatmeal Cookies

We are in the middle of an ice storm. Not much to do indoors or out. I’m trying to stay in front of the wood stove to keep warm. My problem is I’m craving something sweet. What better way to satisfy a sweet craving than cookies. 

My Man must have had a sweet craving, too, because he stopped by the store and bought some oatmeal cookies. They tasted okay, but they are hard as a rock. I decided to make some chewy ones. 

I found a recipe in the internet and tweak it some. Much better! 

I do apologize for the picture quality. It is a very cloudy and dark day and that makes lighting horrible. 

Chewy oatmeal

Whatcha Need

  • 1 cup brown sugar
  • 1 cup sugar
  • 1 cup butter (2 sticks)
  • 1/3 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • 4 cups quick cooking oats
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Putting It All Together

In a mixing bowl beat

IMG_9933butter, 

IMG_9935and vanilla 

IMG_9936until creamy. 

IMG_9938The spinning mixer was making me dizzy. 

IMG_9940Add the oats, 

IMG_9942flour, 

IMG_9943baking soda,

IMG_9946and salt. Stir into moisten mixture. 

Mine seemed dry. I couldn’t figure out why. 

IMG_9947Them I remembered the egg. The egg should have been added with the sugars, milk, butter and vanilla. 

IMG_9948Stir it all together until well moistened.

IMG_9950Drop by spoonfuls onto a greased baking pan. Bake for 8-10 minutes at 375 degrees.

IMG_9955Let cool about 2 minutes on pan then cool completely on a wire rack.

My Man enjoys putting some marshmallow cream in between two cookies.

Ingredients
  1. 1 cup brown sugar
  2. 1 cup sugar

  7. 4 cups quick cooking oats

Instructions
  1. In a bowl mix together brown sugar, sugar, milk, egg and vanilla until creamy. Stir in oats, flour, baking soda and salt until well moistened. Drop by spoonfuls onto a lightly greased baking sheet. Bake for 8-10 minutes at 375 degrees. Cool about 2 minutes on the baking sheet before moving to a wire rack to cool completely. Enjoy!

    Jayne I always love your recipes with easy to follow directions and have used them several times. Makes staying at home a little easier when Greg is still getting paid! :)

      Glad you like them, Karen. I need to go back and add the printable directions to most of them. Good project for a snow day! It does make it easier. If he were still at Georgia Poultry, he would be at work right now.
