Buffalo Chicken and Potatoes

I am really, really, really tired of cooking the same meals. I have been on a quest this summer to find some recipes that I have never had before. 

I came across this one and though I’m not a big buffalo chicken girl, my fellows like hot stuff (which is why MM married me!) so I thought I would give it a try. 

I made some minor adjustments to my recipe. In other words, mine isn’t as spicy hot as their’s. I’m not crazy about spicy foods, says the one who loves fireballs. Go figure! 

Buffalo Chicken and Potatoes

Whatcha Need

  • 1 pound boneless chicken breasts, cubed 
  • 3-4 medium potatoes, cut in 1/2″ cubes
  • 1/3 cup olive oil
  • 1&1/2 tsp salt
  • 1 Tbsp. black pepper
  • 1 Tbsp. paprika
  • 2 Tbsp. garlic powder
  • 3 Tbsp. hot sauce
  • Topping:
  • 2 cups shredded cheese (pick your flavor)
  • 5 slices of crumbled bacon (which I was out of :( )
  • 1/2 cup diced  onion

Putting It All Together

Preheat oven to 375. 

In a mixing bowl pour in oil.

buffalo chicken and potatoes garlic,

buffalo chicken and potatoes and hot sauce.

buffalo chicken and potatoes Peel and cube potatoes and add to spice mixture. 

buffalo chicken and potatoes Give ’em a good tossing to coat. 

buffalo chicken and potatoes Using a slotted spoon, ’cause you want to keep as much of the spicy mixture as possible, put the potatoes in a greased 9 x 13 baking dish.

buffalo chicken and potatoes Now since it is in the middle of summer and I didn’t want to make my house any hotter than it already is, I didn’t bake my potatoes at 500. I went for 375. Worked just fine. Bake for 45 minutes. *TIP: cut the potatoes into smaller cubes and they don’t take as long to cook. Turn them about every 15 minutes. 

In the meantime…cut the chicken into small pieces.

Put them in the spicy mixture and let marinate while potatoes are cooking.

If you have bacon, now is the time to cook it. Also, chop the onions, and shred the cheese. 

When the potatoes are done, place the chicken on top of potatoes.

Put it back in the oven for 15-20 minutes or until chicken is done. 

buffalo chicken and potatoes Doesn’t that look so delicious? I’m glad I cut back on the hot sauce. Made it just right for my taste buds. I served it with a side salad of lettuce, cucumbers, carrots, cheese and ranch dressing. And of course we drank sweet tea with it!

My youngest said it was really good. If I get a compliment from him, while he is eating it, you know it is good.

Ingredients

  2. 5 slices of crumbled bacon
  3. 1/2 cup diced onion

  1. Preheat oven to 375. In a mixing bowl pour in oil. Add salt, pepper, paprika, garlic and hot sauce. Mix well. Peel and cube potatoes and add to spice mixture. Toss to coat. Using a slotted spoon, keeping as much of the spicy mixture as possible, put the potatoes in a greased 9 x 13 baking dish. Bake for 30-45 minutes or until potatoes are tender, turning every 15 minutes. While potatoes are baking, cut the chicken into small pieces. Let marinate in spicy mixture while potatoes bake. Also shred cheese, chop onions and fry bacon. When the potatoes are done, place the chicken on top of potatoes. Sprinkle the onions, cheese and bacon on top of the chicken. Bake for another 15-20 or until chicken is done.
