Bacon and Ranch Potato Salad

Bacon and Ranch Potato SaladI made this potato salad to take with us to the lake.  I found the original recipe here. I tweak it some. 

Now, My Man is used to the old fashion mustard potato salad, but when he tasted this, he told me not to let anyone else taste it. They wouldn’t like it. In other words, it was really good and he wanted it all to himself. I knew I had a keeper. 

Since we were going to the lake for the weekend, I doubled the recipe so, we could have it with a couple of meals. It made almost a gallon of potato salad! I’m giving you the un-doubled recipe. 

Whatcha Need

  •  1 ½ lbs. potatoes, cut into ¾” chunks (I used russet, but whatever kind you like)
  •  1 oz. Hidden Valley Ranch Dip Mix packet
  •  ¾ c. Low-Fat Sour Cream
  •  ¼. c. Mayonnaise
  •  ½ tsp. Garlic, minced
  •  ½ tsp. Ground Pepper
  •  1 tsp. Dijon Mustard
  •  ¾ c. Shredded Cheddar Cheese
  •  5 slices Bacon, cooked and chopped
  •  Minced chives

Putting It All Together

IMG_1333Peel and cube the potatoes. Drop in boiling water and boil for about 10-15 minutes or until tender. Drain.

Bacon and Ranch Potato SaladPlaced the drained potatoes on a baking sheet lined with foil. Sprinkle the ranch dressing over the potatoes and place them in the fridge to cool, for about 30 minutes. 

While the potatoes are chillin’ in the fridge, mix together, in a large bowl, the sour cream,

the garlic,

IMG_1348Stir it all together, mixing it well.

IMG_1350After that is done and while the potatoes are still chillin’, shred the cheese (which I didn’t get a picture of) and fry the bacon.Bacon and Ranch Potato SaladMix the cheese in with the cream mixture.

Bacon and Ranch Potato SaladLastly, add those chilled potatoes and sprinkle some chives on top.

Let it all chill in the fridge for about 2 hours so all the flavors have a chance to get acquainted with each other.

Instructions

Sprinkle the ranch dressing over the potatoes and place them in the fridge to cool, for about 30 minutes. While the potatoes are chillin' in the fridge, mix together, in a large bowl, the sour cream, mayonnaise, garlic, pepper, and Dijon Mustard. Stir it all together, mixing it well. Shred the cheese and fry the bacon. Stir into the sour cream mixture. Remove the potatoes from the fridge and fold into sour cream mixture. Sprinkle with chives. Allow to chill for 2 hours before serving.

  1. This looks great…it is similar to my Baked Potato Salad…the ranch dressing is a great idea!…Will have to try this soon!

  2. How do I know that Jayne is back…..? My stomach is growling once again! :) similar to wife’s recipe…expect being from Germany, she makes the old world style salad….she serves it warm…..and without ranch…..it’s hard to get Americans to accept the idea of warm potato salad – took me a few years…but now it’s the only style I like…funny how that happens huh? :)
